A Guide to our Catering

We are conscientious about where we source our food from and the preparing & serving of foods that we offer to our guests.  We aim to provide fresh, tasty & nutritious meals, including alternatives to the traditional full English breakfast.

If you require a special diet please let us know.

In line with health & safety requirements we only cook with grade A fresh hens’ eggs.  We choose to cook with English organic free-range eggs.

*Something special-: Free Range Eggs in Support of Rare Breeds.
These are available for their superior flavour & quality.  Again these are grade A.  Clarence Court Old Cotsworld Legbars are ‘Vegetarian Society’ approved, and enjoy a natural cereal based diet and the freedom to roam over acres of green pasture.

Our meat products are the best quality chosen from local Lincolnshire breeders and suppliers. An exception to this would be our choice of supplier for Black or White pudding.

We use fresh locally grown vegetables, herbs & fruit, some grown locally on allotments and from our garden, some of which we blanch then freeze.  Others, eg quality peas, we buy frozen.

We use sea salt and whole black peppercorns.  Our stocks, sauces & soups are home made using fresh or dried herbs.  Cooking oils we only use Sunflower & Virgin Olive Oil. Our own home made pastry products contain 59%vegetable oil & 21% olive oil & no e-numbers, colours or preservatives. No Hydrogenated Fats.

The flour we use is Stoneground Organic from Sibsey windmill.

Fresh fish from local fresh fish retailers, Rutland Water Trout, other supplies from Seahouses in Northumberland.  Also Cornwall.

Ground coffee beans.  In supporting Fare to Farmers. A cup of freshly, home ground coffee is always available during your stay on request ~  From lunch time till early evening from £1.30. 

Other Coffee & breakfast tea are from Fair Trade.   Sugar is natural unrefined golden granulated. We use semi-skimmed milk.

Porridge Oats are Pure Organic Oats, grown with conservation in mind.

Ice-cream made in the English countryside. Find out why “Thaymar” Dairy ice-cream won several Gold Awards & Silver Awards in the 2004/05 Great Taste Awards. 

Cheeses are local and regional farmhouse cheeses from around the UK, occasionally from other countries ie Canadian Black Diamond

Pick your own Berries at York House.  (Seasonal).

Our Honey is Supplied by the Village beekeeper. Honey to buy £2.75 a pot.

Manx kippers available if there is a supply problem with Seahouses.

Free Range Eggs. In supporting Rare Breeds we choose Old Cotswold Legbars And Oakham Blue.

Bacon, using specially selected pork from the West Country, drycured by hand & slowly matured for that fuller flavour & drier texture.

York House sausages are  80% Lean cut pork with added belly pork for extra flavour, herbs, a little seasoning organic wholemeal breadcrumbs or Rusk.
The skins are natural which we buy with the fresh meat from a local butcher using the known local breeder.
